ABSTRACT

The objective of this paper is to conduct a study about antioxidant activity of beta-caroten, lutein, lucopene, catachins, cryptoxanthins, zoochemicals and various indoles and flavnoids and recent work related to this field. Highly reactive free radicals and oxygen species form in body from wide variety of sources. These free radicals may oxidize nucleic acids, proteins, lipids or DNA and can initiate degenerative disease. Clinical studies suggesting that the antioxidants in fruits, vegetables and tea are the main factors for the observed efficacy of these foods in reducing the incidence of chronic diseases including heart disease and some cancers. Especially fruits, vegetables, and herbs attract great attention due to their high content of bioactive compounds with antioxidant characteristics.
